Almond Flour Waffle Recipe

We do not follow a gluten free diet but my kids love these almond flour waffles for a change. They just taste different from whole wheat waffles. A combination of applesauce, oats and almond meal give the waffles a nutty taste and fluffy texture.

Oh, and they come out crispy with a few simple tips. You like that? Us too.

Usually you need to add oil to the batter to prevent waffles from sticking but I found spraying the griddles with cooking spray each time did the job. Since I already added so much applesauce I didn’t add any oil.

Crispy Waffles?

Yes.

These gluten free waffles with almond flour are crunchy if you cook them a minute or two past the “ready” indicator time. Almost “starting to burn” look – I love it. They taste especially crispy right after cooking.

Later on they absorb moisture and become softer but still super tasty. If you store almond flour waffles uncovered on the counter they will keep their crispiness. For about a day. After that I transfer them to a container to prevent from drying out completely.

To crisp up softened almond flour waffles, place them in a toaster for a few minutes. Easy-peasy!

Almond Meal or Flour?

Almond flour, almond meal or even hazelnut meal work. As you can see from a picture below, I used hazelnut meal because that’s what I had on hand.

And let’s talk about oat flour for a second. It adds to the crispy texture of waffles and makes them more affordable. Because let’s be honest nuts are expensive. I have not tried this almond flour recipe without oats so can’t tell you.

Tip: Batter consistency should be of normal pancake-waffle consistency. Not too runny and yet so a spoon doesn’t stand in it.

Can I Make Ahead and Freeze Waffles?

Absolutely.

You can prepare batter the night before and refrigerate it overnight. Make waffles in the morning.

To freeze, cook almond meal waffles and let them cool. Then place in Ziploc plastic bags and let out as much air as possible. Freze for up to 3 months. Pop frozen waffle into a toaster and enjoy! Waffles are one of the best healthy freezer meals and snacks.

Tip: To be environmentally friendly, I wash and reuse plastic bags. Please do so too. Helps a whale or two. Sad truth is we produce more plastic than we can recycle.

Ingredients

  • 1 egg, large
  • 2 large eggs
  • 1 1/2 cups applesauce, unsweetened
  • 1 1/4 cups any milk (I used unsweetened almond milk)
  • 1/2 cup maple syrup or honey
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups oat flour (finely ground oats) – use GF if necessary
  • 2 cups almond flour, almond or hazelnut meal
  • Cooking spray (I use Misto)

Instructions

  1. In a large mixing bowl, lightly whisk eggs. Add applesauce, milk, maple syrup, vanilla extract, baking soda and salt; whisk until well combined. Add oat flour and almond flour, mix well.
  2. Preheat waffle maker. Spray top and bottom griddles with cooking spray each time and make waffles according to your waffle maker’s instructions. Amount of batter depends on the size of your waffle maker. I used about 1/3 cup batter per waffle.

Store: Refrigerate in air circulating container for up to a week or freeze for up to 6 months.

Freeze: In a Ziploc plastic bag for up to 3 months.
