Banana Chocolate Chia Pudding

After a successful attempt to make chia pudding, I fell in love with chia seeds. The simplicity, the taste and health benefits of this new evolving food that all nutritionists and fitness gurus rave about, made me curious. And they were right!

Usually, I’m not a very excited person first thing in the morning until I have a cup of my organic Ethical Bean coffee. The best coffee ever by the way! I buy medium dark roast 2 lb bag at Costco for $16.

That morning, after I made my first overnight chia seed pudding, I was eager to get up and try it. Since then, I love to add a variety to my breakfasts with this simple and nutritious meal. Chia seeds super healthy and good for you! Full of healthy fats, protein and fiber keeps me full for quite a while.

This time I decided to put America’s all favourite twist on chia pudding and create Banana Chocolate chia pudding recipe. I’ve never tried an original banana chocolate pudding. So, I have no idea how it “should” taste. I’m just not a fan of pudding. That stuff just can’t be good for you and the texture isn’t my favourite.

This chia pudding turned out great! Greek yogurt on top tastes and looks like whipping cream. And a little bit of dark chocolate chips or carob chips wouldn’t hurt.

Even my kids ate it and honestly I didn’t think they would.

I bought a 2 lb bag of C & F Foods Inc. chia seeds at Costco. You can buy them at almost any grocery store these days.

My mom is visiting this week, so I’ve been baking a lot. Since we tend to eat dessert every night, it HAS to be healthy!

Last night I made a pumpkin cake with black beans and light cream cheese frosting. I got the recipe from my neighbour but 1 cup of oil and 4 cups of sugar have to be cut down.:) I already reduced the sugar to 3/4 cups and no oil. After only 2 tries I have perfected it and posted a recipe.

Banana Chocolate Chia Seed Pudding Recipe

Ingredients

    For Pudding:
  • 0.5 medium banana, mashed
  • 1 tbsp blue agave nectar
  • 1 tbsp cocoa powder, unsweetened
  • 6 tbsp chia seeds
  • 1.5 cups vanilla almond milk, unsweetened
  • For Garnish:
  • 0.5 medium banana, sliced
  • 2 tbsp 0% Greek yogurt, plain
  • 1 tsp chocolate chips

Directions

  1. To make chocolate pudding: In one mason jar or any container combine 4 tbsp chia seeds, 1 cup almond milk, cocoa powder & agave nectar. Stir well.
  2. To make banana pudding: In a second mason jar or container combine mashed banana, remaining chia seeds (2 tbsp) and almond milk (0.5 cup). Stir well.
  3. Cover both jars and refrigerate for at least 4 hours or overnight.
  4. To serve divide equally between 2 bowls or glasses and layer in the following order: chocolate pudding, banana, banana pudding. Top with Greek yogurt and chocolate chips.
