I’m not the biggest oatmeal fan, so when it comes to eating it, it’s truly “MY WAY or THE HIGHWAY” situation here. I turn into a true 5 year old when it comes to an oatmeal. So you better believe me when I say I have tested Instant Pot steel cut oats about 7 times until I found a perfect method the way I like them – perfectly creamy with a crunch. Just like the photo suggests. To me, they can’t be undercooked and chewy or overcooked and mushy; oats gotta be cooked soft WITH a crunch.

Steel cut oats are the healthiest out of all types of oats because they are least processed. Oat groats are harvested and then cut into smaller pieces using steel blades, hence the name. A bowl of steel cut oatmeal will keep you full much longer than a bowl of oatmeal made with quick or rolled oats. After eating processed oats, I’m hungry an hour later, just like after a bowl of cereal.

It would be only fair to warn you about pressure cooker steel cut oats – total cooking time is 20-25 minutes because pressure cooker needs to build up pressure. On the stove, steel cut oats take 30 minutes plus you have to bring them to a boil, stir and watch not to run (tip: placing wooden spoon on top of the pot takes care of that).

So, Instant Pot ain’t a miracle appliance that cooks oatmeal in 3 minutes BUT you turn it on and walk away. Or even better, use Delay and set it up for the morning (since there is nothing to spoil in a pot sitting on a counter overnight). That’s a huge bonus!

2 cups steel cut oats + 4 cups water = feeds 4 people. Or save it for tomorrow.

I like to keep “the base” simple, everyone can dress up their oatmeal afterwards the way they like it. I tried adding vanilla, cinnamon and almond milk with the oats and didn’t love the result. So, why waste money?!

Close the lid, set pressure vent to Sealing, press Pressure Cooking on High for 12 minutes and cancel/don’t turn on Keep Warm.

Oats are meant to be eaten right away for breakfast, they are not make ahead dinner. Keeping them warm will continue cooking the oatmeal eventually burning it. So, cook, eat and go to work/school.

Using long spoon or with a towel, turn pressure valve to Venting position to let pressure out. It will take 1-2 minutes and the process isn’t that smelly or messy. Only water and steam will come out, no foam or pieces of oatmeal – don’t worry.

Instant Pot Steel Cut Oats

Instant Pot Steel Cut Oats

Yield: 4 servings

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 2 tbsp butter
  • 1 cup milk

Directions

  1. In Instant Pot, add oats and water; stir. Close the lid, set pressure vent to Sealing, press Pressure Cooking on High for 12 minutes and cancel/don't turn on Keep Warm. Display will say ON, Instant Pot will take about 10 minutes to come to pressure, then float valve will rise and countdown from 12 minutes will begin.
  2. When oatmeal is ready, display will say OFF. Using long spoon or with a towel, turn pressure valve to Venting position to let pressure out. It will take 1-2 minutes and the process isn’t that smelly or messy.
  3. When float valve is down, open the lid, add butter and stir until melted. Add milk, stir and serve however you like it. That was easy!

Notes

You can use Delay function, set oatmeal at night for -25 minutes your breakfast time, and wake up to freshly cooked steel cut oats.
