
OK, these might not be the most appetizing muffins you have ever seen but they are delicious! I’m posting my Green Frittatas anyways.:) I have said it before and will say it again – people are too hung up on the way food looks! I can tell it from my own experience when I know a recipe with cheese goes viral and Green Smoothie is barely getting repins.
I’m so sick and tired of being forced pretty looking junk food onto myself and my family. It’s everywhere and I’m getting sick of it being served to me and my kids, and being ashamed to talk about it because people’s feelings might get hurt. How is hurting their health is OK to do and not OK to mention it to them? How on Earth this society got to this point?!

My tipping point was reached this week when my son’s hockey (doing sports is healthy, right?!) team is having a year end party and we got invited to 2 meals: lunch at the most junkiest roadhouse and pizza at the hotel. I looked on the menu of that shit roadhouse and I swear even salads are not worth even my lick, not to mention my hard earned $$$s! Not a single vegetarian item either. All saturated meats, cheese and fries. Pizza night doesn’t bother me much as we will eat in our hotel room (“yay” to full kitchen) beforehand and just join for games and fun. This roadhouse just killed me! I emailed the team manager and said we are not going because the menu doesn’t offer healthy options. Guess what, they nicely considered my concerns and now we are going to a Mexican restaurant I picked. It says right on the menu they cook with “heart healthy” canola oil, so we will try to choose vegetarian and nothing fried. So, speak up people and you will be heard!
And school is a different story. All those pizza, hot dog and Subway days fundraisers are driving me crazy too. Honestly, enough feeding our kids junk! Then there are always sugar loaded drinks and foods at marathon events, bake sale for Christmas, teacher treats for kids. Come on! From now on I will be openly talking about these issues with everyone that comes in contact with my food. My pledge!
Do your kids participate in various junk food events at school? How to avoid them?! I let my son eat it a few times a year so he doesn’t feel left out. But I want school to earn kids’ trust and respect not with sugar but maybe tattoos, stickers or rubbery frogs. I don’t want drama teacher giving out candy after class making a decision when my child will eat candy. I, as a parent, will decide! I don’t want a teacher asking to bring an empty chocolate milk container, a bag of candies and a can of frosting to make a gingerbread house craft. I am supposed to first spend money on junk and then eat it to make a craft?! How crazy is that! And if I don’t my kid is not getting a craft activity? Why junk food again? Why not construction paper?!
So, the moral of the story is – fight for what you believe in! Especially when it comes to health, as that is all that really matters at the end of the day. Nice trucks, big houses and luxury vacations are just a fluff…
Ingredients
- 1 cup egg whites
- 4 eggs, large
- 2 cups broccoli
- 2 handfuls spinach
- 3/4 tsp salt
- 1/2 cup quick or rolled oats
- 1/2 tsp baking powder, aluminum free
- Ground black pepper and red pepper flakes, to taste
- Cooking spray (I use Misto)
Directions
- Preheat oven at 350 degrees F and spray non-stick muffin tin (I use BPA free silicone one) with cooking spray.
- In a blender, add all ingredients and process until desired consistency. You might want to leave broccoli and spinach in larger pieces. Pour into prepared muffin tin and bake for 22 - 24 minutes or until cooked in the middle. Remove from the oven and let cool.
