
I have been looking for a whole wheat banana recipe for some time. Majority of them call for a cup or so of vegetable oil, which in my world is a big “NO”.:) I need to keep things low fat and still moist.
One day I came across Bethenny’s Boo banana bread recipe. I ended up changing it a bit and today I’m sharing this easy, moist & low fat banana bread recipe with you. In short, the best!:)
Banana bread is so versatile. Can be a breakfast, a snack and a dessert at same time. And what a great excuse to use those brown bananas.
By the way, do not throw them out anymore. Whenever, I see my bananas start going bad, I freeze them and use in baking. For example, in this whole wheat banana bread.
I love banana bread with a bit of organic unsalted butter on top. A bit won’t hurt you. It’s actually much better for you to eat a bit of real food than “I can’t believe it’s not butter” stuff.
And if you want to make this whole wheat banana bread vegan, just replace butter with coconut oil or any other vegetarian source oil. I couldn’t avoid the white flour completely. Lesson learnt, baking only with whole wheat flour makes baked goods too dense. And the key is to sift the whole wheat flour and add at the end.

Tips
It’s OK to use salted butter and not so ripe bananas.
If using sweetened applesauce add only 3/4 cup sugar.
It is extremely important to sift the whole wheat flour, not to over mix and do it right before putting bread in the oven. Otherwise, the bread will not be fluffy.
The batter should be thick and not runny.

Ingredients
- 2 eggs
- 1 cup applesauce, unsweetened
- 3 ripe bananas, mashed
- 2 tbsp butter, melted
- 1 cup brown or raw sugar, unpacked
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 3/4 tsp baking powder
- 1 tbsp baking soda
- 1/2 cup white flour
- 1 1/2 cup whole wheat flour, sifted
Directions
- Preheat oven to 350 degrees. Line 9"x2.5" loaf pan with parchment paper.
- In a bowl whisk eggs for 30 seconds. Add applesauce, bananas, butter, sugar, vanilla extract, salt and mix well with a spatula. Set aside.
- In a different bowl mix together baking powder, baking soda and white flour. Add to the bowl with liquids from step #2 and mix to create a batter. Sift whole wheat flour into the batter and gently fold it in just to combine, do not over mix.
- Pour batter into the lined loaf pan, cover loosely with foil and bake for 30 minutes. Remove foil and bake for another 40 minutes or until the inserted toothpick comes out clean. Let the bread cool completely before serving. Cut into 14 slices and enjoy.
