Delicious, organic, vegan breakfast on a budget that is packed with protein and healthy fats. “Eggs” that are made with tofu and my kids couldn’t tell.

I’m in love with my new vegan “scrambled eggs”!!! They are fluffy, moist and you would never guess they are made with…tofu. And please, listen to me, don’t judge the book by its cover. Don’t be like my friend Christi, who called me judgemental.
Last Saturday, Christi had us over for dinner (the one that makes BBQ ribs and Pavlova dessert) and I was telling her about my new recipe. So, I said “Last night I made the most delicious “eggs” without eggs but I don’t think they are up your alley”. Right away she called me judgemental. And I fired back “Do you like tofu?”. Christi: “Eew”. So, who is judgemental now?!
So, don’t judge my tofu! It’s OMG awesome for many reasons:
1. It’s organic and cheap.
2. It’s plant-based and adds a variety to your diet.
3. It contains tons of protein, healthy fats and complex carbs – complete meal in one.
4. It’s highly versatile – it’s plain and you can make it your own.
5. It’s delicious if you cook it the right way!
My kids ate the tofu scrambled eggs! Alex was in love! My boys are not even close to vegetarians and they loved this egg-free version of scrambled eggs. To make “the eggs” yellow I added turmeric – it adds yellow colour and is pretty tasteless. I made these “scrambled eggs” 2 ways: with soft and firm tofu. My favourite was soft tofu version as “the eggs” seem to be more tender and moist but both taste equally good.
Ingredients
- 1 package (350 g) organic tofu, firm or soft
- 4 tsp Frank's RedHot Buffalo Wing Sauce or to taste
- 1/8 tsp turmeric
- 1/8 tsp salt
- Cooking spray (I use Misto)
Directions
- Soft Tofu: Preheat large skillet on medium high heat, spray with cooking spray and add soft tofu. Break into small pieces with spatula and let cook until liquid evaporates. Add buffalo sauce, turmeric and salt, stir until "eggs" are yellow and cook for 2 more minutes.
- Firm Tofu: Cut firm tofu into blocks and crumble with your hands into a small bowl. Preheat large skillet on medium high heat, spray with cooking spray and add crumbled tofu. Cook for 2 minutes, stirring once, and add buffalo sauce, turmeric and salt. Stir until "eggs" are yellow and cook for 2 more minutes.
