Overnight oats – healthy & easy breakfast idea. Use any kind of oats. Vegan & gluten free.
These overnight oats and that chia pudding are perfect for lazy clean eating breakfast makers like me. I ran out of ideas and was getting tired of peanut butter on a sprouted toast breakfast. I just hate cooking breakfast, can’t stand it. I think because I’m still half asleep and have to make sure 2 kids leave the house wearing same shoes and more than a cheese string in a lunch bag. You know?! I’m sure you know.
I told Alex I wish I had a mini coffee machine in our bedroom, that I could program for the morning and then just reach. 10 minutes later I’m a super mom. He suggested I do a review or a giveaway. Which is a good one, guys?!
Just like with my chia pudding, I make the overnight oats in Mason jars. Very convenient and oats stay fresh for up to 5 days. In the morning, I adjust the consistency with some almond milk (depends on a mood), top with nuts, chia and berries/fruit and voila. I love it!
The consistency of the oats depends on an amount of milk you add. And the texture on the kind of the oats. Quick oats will produce soft overnight oats, rolled oats will make the oatmeal chewy and steel cut oats produce a crunchy chewy oatmeal – my favourite! In this recipe I used Bob’s Red Mill organic quick cooking steel cut oats.
The overnight oats turned out delicious! A nutty taste of oats with almond milk is divine. Then the taste of pecans with cold almond milk => I died. Nutty explosion. I loved the texture, the fact it’s a cold breakfast and the endless flavour variations with toppings. You really do not have to boil oats in order to cook them. Quick and rolled oats are partially cooked anyways.
I added a bit more almond milk in the morning. I like soupy texture overnight oats. Then I added some pecans, fresh strawberries and chia seeds. Then I stir well. I like to taste a bit of everything in each spoonful. Alex loved the oats too plus mason jar convenience for breakfast on-the-go is a big bonus. This recipe is definitely a keeper!
